John Palmer, the author of How To Brew, pulls the lid off of the fermenter and digs past the krausen to discuss yeast activity, nutrients, stress, ester formation, and eventual maturation of the beer. He will paint the big picture of how initial conditions affect the final flavor of the beer, as well as diving into some of the details to give you a good understanding of how it works. John J. Palmer is author of the bestseller How to Brew: Everything You Need to Know to Brew Great Beer Every Time, co-author of both Brewing Classic Styles, and Water: A Comprehensive Guide for Brewers from Brewers Publications.
John J. Palmer was born and raised in Midland, Mich., and graduated from Michigan Tech University. He graduated with a degree in Metallurgical Engineering in 1987. John worked in the space program at a failure analysis lab in Irvine, California, and he has helped design, build, and inspect hardware that is currently flying on the International Space Station.
