Start by suddenly deciding to brew an IPA with ingredients on hand. Upon realizing that all yeast in the fridge is out of date, brew a blonde ale to revive the yeast. Be pleasantly surprised when the result is a wonderfully clean blonde ale that leaves you with a yeast cake that rips through an IPA, which also turns out fantastic! A good reminder to follow Charlie Papazian’s advice: ‘Relax, don’t worry, have a homebrew.’
Mash at 150°F (66°C) for 60 mins. Pitch multiple packs of out-of-date yeast and hit with oxygen after 24 hours of no activity (or just use 1 pack of fresh yeast instead). Ferment at 67°F (19°C) and allow the temperature to rise to 70°F (21°C) as fermentation progresses.
