Author Randy Mosher has spent the last six years researching and writing a book called Your Tasting Brain: A Sensory Approach to Wine, Beer and Other Pleasures, which covers every imaginable aspect of tasting and flavor creation. Really two sides of the same coin, understanding these two activities are key to brewing delicious beer. The science has been moving very rapidly over the last decade or two, so there’s something new—and useful— here for every level of brewer.
