“Cabo was inspired by those balanced, crisp Mexican pale lagers to be enjoyed in your backyard or on vacation. The style’s appeal is impeccable balance, high attenuation, and effortless drinkability. Rather than following the traditional malt and adjunct approach, I shifted the base malt’s foundation of high-quality continental Pilsner malt and flaked corn. The Pilsner malt provides a softer, more refined light malt character while maintaining excellent fermentability, allowing the corn to lighten the body.”
