This seminar will address several topics of interest for advanced homebrewers, nano brewers and those pondering going pro at the nanobrewery level. In August 2012, the partners who own and operate Market Garden Brewery in Cleveland opened a new concept called Nano Brew Cleveland—a 24 tap beer bar and brewpub featuring a three vessel, 20 gallon brewing system with two 27 gallon cylindroconical fermenters housed in a 9’ by 9’ foot area, bonded by the TTB. This presentation will cover a range of topics related to brewing on this small system, including equipment selection criteria, additional equipment needed, design changes and their associated costs, along with the process used to obtain consistent brewing results. We’ll also discuss the economic realities of operating a small brewing system and offer some TTB licensing advice.
