It’s almost cheating to use Mosaic in a single-hop IPA because it has a more complex aroma and flavor than many hops, featuring several trendy characteristics like fruity, piney, citrusy, and floral. It’s like instant IPA in a single hop varietal. This recipe uses some of my favorite modern techniques, such as first wort hopping and hop bursting, to reduce harshness while giving a smooth bitterness. It also uses honey to increase complexity and attenuation.
While on a recent trip to Brazil, I brewed a commercial scale (10 hL or 8.5 bbl) batch of this beer with Leonardo Sewald and his crew at Cervejaria Seasons (cervejariaseasons.com.br) in Porto Alegre.
