Will Cass started brewing in 2000 when he stumbled upon a Mr. Beer kit. Twenty years later Cass earned the Best of Show title at the 25th annual War of the Worts (2020), the Pennsylvannia-based competition organized by the Keystone Hops Homebrew Club in Montgomeryille, PA.
Cass share’s the following about his Solstice Stout recipe:
“I decided to make an American Stout last year as my December-to-January dark beer, since its dark, roasty, and chocolate notes pair well with all the holiday treats that infiltrate our home… I modeled the sensory profile after the description on a package of high-end coffee beans–highlight the roast, but with enough hop bitterness and citrus notes to complement and make sure it stays in the American stout realm.”
