Beer soup.......

The clone recipe book "Beer Captured" has some beer food recipes in the back. There's a Belgian beer soup....... The usual aromatics, thyme, parsley, a little flour..... Then a little milk and beer. A bottle of Leffe in my case... ;D.. Two cans of white kidney beans, a can of corn, a can of chopped tomatoes and, for that little extra, 6 chorizo sausages sliced....... VERY slowly simmering for a while, then in the garage 'till Sunday which is BREW DAY and the FIRST DRAFT of my first batch (APA) It will all be served with a couple of loaves of home made bread, Brie, Manchego and a some grated sharp cheddar from raw milk on the soup....

Oh man, I can't wait..........life is GOOD!

Not sure.... there's a Fresh Market where I get all my meats. More $$ but always quality and it DOES make a difference. They have a wide selection of sausage, most of it made locally here in Eastern PA.....

for tonight's brew club meeting (we always start with a potluck dinner), I'm making a lentil soup using turkey stock I made from the bird's carcass last week. it'll have turkey meat & andouille sausage. will season with salt, pepper, and chipotle tabasco sauce. yummmm.

I make the turkey stock the next day, have two gallon jugs frozen in the keggerator bottom. It's nice to have extra freezer space! Will make something nice with that this winter......Usually some meatballs, Brussels sprouts, s***ake...... yum.

yeah, what he said.... made the stock the next day. made a big pot of split pea soup with it last week, using ham also left from turkey day. had the stock frozen & finishing it up with the lentil soup today.

when I make soup, I use a large kettle and freeze multiple containers of soup for later use. thinking man's lazy approach. likes me good food, likes it even better with little work. it's not much more work to make a huge pot of soup than a little pot. a bit more knife work, but I actually enjoy that part since I've now got a set of shun knives (thanks to woot). once the big pot's done & the soup is in the freezer, I can look forward to multiple yummy meals with little more than heat & eat. soup along with some dark bread & good butter, a bit of cheese, and some beer. works for me.

I also portion mine out and freeze in pint containers. Then remove them from the containers and store in gallon freezer bags. Think I can fit five per bag.

Easy to pop one into a bigger serving container and take to work. Surprising thing is they stay frozen very well and keep my lunchbag nice and cool.
