All of the above are good ones - another might be biscuit malt.  I haven't tried the Hana from Crisp, though.  North Star is definitely a rich flavored pilsner malt.

Yes, I thought of trying some biscuit malt but thought it may be more cracker like then bread. I use it 5-6% in a belgian single recipe.

Biscuit malt gets its name from "biscuits"....cookies.

But they are "bready"... not sweet cookies like we think of in America.

Yeast can play a vital role here as well. Especially certain English strains. WLP007 with some good English crystal malt and a bit of biscuit malt is pretty darn bready to me.

For "bready" or "doughy", I like a Pale Wheat Malt.

Barke has more white "wonderbread" character without the grass and mild herbal flavor that the bohemian malt has. Barke seems to have a slightly fuller mouthfeel as well.

Very much a rich clean "bready" character. Not grassy ot biscuity.

i was waiting to post here, but vienna gives a raw dough/bready complex element i find. i think it could be a player for sure in a very bready character

Hmmm, "wonderbread" or "white bread" don't bring anything good to my mind in terms of flavor. I guess i will stick to the floor-malted pilsner. It is a bit pricey but I know I can get it.
