I'm calling this an American Amber.  Pilsner malt, Special B, British Dark Crystal and then crisply flavored with Willamette and US Goldings .. fermented with 2112 so technically a lager, I suppose.  Came out really nice.

Here it is, my first all grain lager, Munich helles, lagered at 34F for 5 weeks. Turned out very good! flavour I imagine will continue to develop, though I don’t know how far along I will see that as I am already 5 pints in tonight. And I don’t normally drink that much in an afternoon. This is brewed according to reinheitsgebot, aside from adding a little co2 to finish carbonating after spunding toward the end of fermentation at 6ish psi. PROST! Happy holidays everyone, DWHAHB!

Sorry I have had a busy couple weeks! Here it is let me know if I missed anything or you want any extra detail.

10lbs German Pilsner
8oz Munich malt
4oz Carafoam
1oz liberty hops (60 min)
1oz liberty hops (1 min)
1 each wyeast 2308 Munich Helles lager yeast
2 cans of proper starter
1.08g baking soda (mash)
2.52g calcium chloride (mash)
2.87g gypsum (mash)
7 gallons distilled water

- mashed at 149F for 1 hour
- lactic acid 88 to get to 5.25ph (~2 caps)
- grain was milled at .030” (I brew in a bag)
- made a 2L yeast starter 3 days in advance, (wanted to decant after crashing but it did not floculate, I pitched the whole thing, didn’t turn out bad!)
- fermented at 50F
- lagered for 5ish weeks give or take a couple days at 33F

OG was 1.051
FG was 1.011

Pale Ale with Amarillo and Azacca hops. Last bottle that was brewed on June 9, 2023.

Nice looking beer!! I love Edelweiss. It works well in this style among others. I currently have a Vienna Lager and a Czech Lager on tap with Edelweiss. This one is loosely based on Jamil's recipe although I'm sure I tweaked it a bit.

44% Vienna
30% Munich Dark
25% Pilsner
1% Carafa III
(for me this ended up being 4.5 lbs of Vienna, 3 pounds Munich Dark, 2.5 pounds Pilsner, 2 ounces of Carafa III)
About 23 IBUs of Edelweiss from the start of the boil
One ounce Edelweiss for 10 minutes
The yeast was Novalager on this one.  Ordinarily it would be Omega Bayern, 2308 or 2124.
60-minute single infusion mash at 149.5°
I also added a bit of CaSO4 to the strike water to make sure the finish of the beer was crisp and to make sure it wasn't too muddy.

I agree with you on the Edelweiss.  I always have it in the freezer.  But it mildly bugs me that I don't know what's in it.  This batch I have now (2021) seems like it might hve Saphir in it and though I love all things "German" in brewing, it's not one of my favorite hops.  It doesn't come through in this Vienna Lager so maybe I'm wrong.  Cheers.

LOL, I always say I'm a humble beermaker from the Midwest and I'm also not a photographer.  But it's beer and beer porn is inspiring.  Also, our phones are so great at taking good shots these days that you don't have to be a photographer.  I would say that I went to all the best schools but it would be a lie.  :D  Cheers Beerheads.
