Happily. Here's what I did...
9 lbs Briess Pale Ale Malt (93%)
4 ounces Torrified Wheat (3%)
4 ounces Baird's Extra Dark British Crystal 135-165°L (3%)
2 ounces Special B (1%)
21 IBUs of Northern Brewer from the start of the boil
½ oz US Goldings @ 5.7% for 15 minutes
½ oz US Goldings @ 5.7% for 5 minutes
1 oz US Goldings @ 5.7% for 1 minute
Fermentis S-04
OG: 1.051, FG: 1.012, SRM: 10.5, IBU: 29, ABV: 4.9%
Single infusion mash at 147° for 60 minutes. Water was split evenly between CaCl and CaSO4. If you haven't used S-04, it likes to produce diacetyl. A warm rest towards the end of fermentation is helpful. It's the only drawback I can find to this yeast. Otherwise it starts quickly, produces a nice bready character and drops like a rock. Cheers.
