Temp probe placement

Tomorrow im doing an 80/- that will be 1.050 and an APA that will be about 1.060, both with wyeast 1728 at 62º.

Which one would you put the controller temp probe on? Im leaning toward the bigger beer, assuming it will have more internal temp increase, and longer active fermentation.

I think I'll step up the temp a couple degrees a day to 68º starting after the krausen falls on the APA. Kind of attenuation insurance.

Thoughts?

Assuming they are in identical containers, I'd put it on the one that has the smaller volume, as that will have lower thermal mass and therefore will fluctuate just a tiny bit more.

Makes sense. They'll be in speidel 30Ls. Assume for a minute theey are same volume, then what?

I would go with the higher OG.

I went with the higher 1.062 APA! Which also happened to be the lower volume by about 3 cups. The 1.054 80/- and the APA were both bubbl7ng away at 12 hrs in, and the temp is 62º dead on every time I look.
