The pork looks fabulous!

Beautiful river scenery in the backyard.  :)

Thanks for posting Jim.

euge,

I would say there is some residual sweetness that I like.  Nothing dramatic.  My 12-year old granddaughter claimed it tastes slightly "orangey", but I think that's more the power of suggestion in her head than anything else.  I will continue injecting for awhile.  I want to try other concoctions with perhaps more intense flavors.  The O.J. concoction was:

30oz O.J.
2tbls yellow mustard
2tbls pork rub

It's worth doing again, I think, perhaps increasing the mustard/'rub.

It's funny how many people on other BBQ forums warned me that the meat could get mushy, and the injection flavors would be too strong.  They were wrong on both counts, lucky for me.

I brined and smoked some split chickens.  Brining solution was a combo of water/kosher salt/sugar, plus what you see in the pic(minus the pils).  I brined them, refrigerated them for about 5 hours, then seasoned with Mohunken Rib Rub.

This is 2 hours into the cook at 180F.

The obligatory "scenery" shot.

At the 2-hour point, I cranked up the temp to 350 for 1 hour.  Ready to come off.

That's making me hungry for chicken. Very very hungry. :D

Edit: Since the photobucket debacle I must affirm: that was some badass looking chicken.

Wow.  I just realized when I delete photos from photobucket, they disappear anywhere that I copy them to.  Lesson learned. :-[

That's because this site doesn't store photos, so you're not copying them. The site loads it from photobucket each time.

Man I'm sure glad you take pics of what you cook. Always inspires me to try something a little bit different. Love the idea of bacon wrapped asparagus. You must have a large family to feed!

Nice pick of the house. Do you have a rain-water collection system?

thanks!  that picture was of a tropical storm as it was rolling in off the gulf this summer.  we actually don't have a collection system, but that would have been a great idea seeing how they doubled our water bills last year.  :\

Yes. All of my household water is rainwater catchment - stored in a 20,000 gal. cistern.

Sad little meal for such a big pit - but it's what I got to show for now...

Cevaps aren't so bad, the pit was just destined for greater things.
Anyone know a welder? I think I need a more impressive cooking surface.
It was meant for pig on a spit - but open fire cooking would be cool with a more massive grate...
The moral majority, is neither.
