Wow...simply awesome photos.  8)

Your photography is wonderful. You just inspired me to smoke a pork loin that I have in my freezer. I'll do a bacon weave and stuffing as well. I'll post pics.

mmmmmm, looks awesome! The only thing I'd do would be to reduce some balsamic to a syrup and maybe use it with the sprouts. Sweet and salty ftw... Although with the chutney perhaps you wouldn't need it.

great idea!  the chutney actually did serve as a nice addition to eveything on the plate.

i was at a pretty serious disadvantage here as my wife was working and i only had a friend for a few minutes to catch a couple "action" shots for me.   the six year old couldn't take a steady picture.  i was also watching an eleven month old while i was doing this.

i think a few people have voted for others because i didn't have any shots of my whole self or my kids or my dead dog in the picture....

thanks guys....  belive this or not, the missus said it tasted better than it looked.  having never done this before, i wasn't sure how it would turn out, but i was pleasantly surprised.

I used the UDS tonight to smoke roast a chicken.  Spatchcocked, rubbed with cajun spices, cooked for about an hour at 350F or so.  Smoked with madrona wood and leek scapes.

It came out perfectly cooked; tender, juicy, and delicious. :)
