Keep us posted...looking good.....I wonder just how you plan to get samples
of the beer as it ages? What is your plan/method?
i did a regular ipa in there just before christmas and i let stay in there about 12 days. the barrel had just had some balcones blue corn whiskey in it, so it probably picked up some flavor from that.
i'm doubting i get as much whiskey from it this time as it has been filled with distilled water and campden tablets for about three months or so.
i plan on letting it sit in there for about three or four weeks and then i'm going to bottle some and keg the rest.
i'll keep the thread updated.
the last beer that went in there was about 7%. this one is closer to 11%.
